El Vaquero BBQ & Catering, Inc. is your true Santa Maria-style barbecue company. This method of barbecuing dates back to the mid-19th century and is today regarded as a "mainstay of California's culinary heritage.
Santa Maria-style barbecue centers around beef tri-tip, seasoned with black pepper, salt, and garlic before grilling over coals of native coast live oak, often referred to as "red oak" wood. The grills are made of iron and has a hand crank that lifts or lowers the grills over the coals to the desired distance from the heat.
In addition to the traditional tri-tip, we offer a versatile menu, cooking all raw ingredients at your event location to ensure your meal is served with superb quality and freshness. Whether you are interested in breakfast, lunch, dinner or anything in between, we’ve got you covered. Your Pit Master and team will be working behind the scenes preparing your meal and buffet set up. We work closely with other key vendors to ensure timeliness of your meal and quality presentation.
